Chicken Cordon Bleu


This dish is the childrens favourite that is quite simple and fun to make. You can easily prepare the chicken in advance if you like to save time if you are in a pinch. It also looks great on the plate so it could be a nice option for a dinner party. I usually serve with roasted root vegetables and green salad with lots of colour.

Prep time: about 30mins

Cooking time: 20-30mins

Ingredients:

- boneless/skinless chicken breasts (1 per person)
- sliced cooked ham (1 slice per breast)
- sliced gruyère or Swiss cheese (1.5 slice per breast)
- bread crumbs (2 cups per 5 breasts)
- 2 eggs ( per 5 breasts)
- seasonings, herbs and spices - Oregano, thyme, rosemary, black pepper and salt (just a pinch), ( about 1/4 cup dry or fresh blended per 5 breasts)

Method:

- preheat oven to 175 degrees C
- lay chicken on a cutting board or other hard, flat surface and pound until about 2 centimetres thick
- beat eggs in a large bowl and in another bowl mix bread crumbs and spices
- wrap chicken around one slice of cheese and one slice of ham as tightly as possible
- dip the stuffed chicken in egg and roll in bread crumb mixture making sure to hold tightly
- place breast in a lightly oiled glass baking disk opening down and top with half a slice of cheese
- bake for 20 - 30 minutes depending on oven and breast thickness, always slice into breast before serving to ensure there is no pink flesh remaining

Serve with roasted veggies and salad of your choice.
